Today we will prepare some delicious shrimp skewers with bacon seasoned with chili and lemon, one of the appetizers that we usually like because of its rich aroma and the crunchy texture of the shrimp when they are covered by the bacon once they are exposed to the fire of the grill.
Ingredients
- 500 grams of raw shrimp, peeled and deveined
- 12 strips of thin bacon, cut in halves
- ½ teaspoon chipotle powder or chili powder
- 4 cups water
- 2 tablespoons extra-virgin olive oil
- juice of 4 lemons
- ¼ cup sugar
- Salt and pepper to taste
Preparation
- Whisk sugar and ¼ teaspoon salt in water until dissolved. Add shrimp and let stand for 30 minutes (no more). Remove shrimp from brine.
- Prepare the grill to high direct heat (if grilling) or preheat the oven to 180°Celcuis. If grilling and using thin bamboo or wooden skewers, soak them first in water for 30 minutes.
- In a small bowl, mix together the lime juice, olive oil and chipotle powder. Add shrimp to lemon-chipotle mixture; toss until shrimp are well coated.
- Spread bacon pieces over several layers of paper towels on a microwave-safe plate. Cover with another layer of paper towels. Microwave on high until the bacon fat begins to melt, 1 to 2 minutes.
- Wrap shrimp one at a time with bacon, thread shrimp onto skewers or wooden toothpicks, place on a baking sheet, and then coat shrimp with lime-chipotle mixture.
- Grill your bacon shrimp skewers for about 3 minutes on each side or bake in the oven at 180°Celcuis for 10 minutes or until the bacon is lightly browned and the shrimp is cooked through.
Tips
- When grilling shrimp, we recommend brining them (in our recipe it is salt and sugar) first as this will help the shrimp to retain their moisture. Even when exposed to the heat of the grill, the bacon shrimp skewers can remain juicy.
- Be sure to pre-cook the bacon 5 minutes, in the microwave or on a griddle, before wrapping the shrimp. Otherwise, the shrimp will overcook in the time it takes for the bacon to cook.
- Keep in mind that you will need 1 strip of Bacon for 2 each shrimp.
