Ingredients
- 500 grams (1 pound) large shrimp, peeled and deveined
- 1 red bell pepper, cut into bite-size pieces
- 1 pineapple, cut into bite-size chunks
- 2 tablespoons honey
- ½ cup BBQ sauce
- Black pepper and salt to taste
Preparation
- If using wooden skewers, it is essential to soak them for 30 minutes to reduce burning and splintering.
- Place shrimp and vegetables in a large bowl and add ¼ teaspoon salt, ¼ teaspoon pepper, BBQ sauce, honey and stir well until combined.
- Place shrimp on skewers along with pineapple chunks and red pepper. Preheat barbecue or grill to high for 4 minutes.
- Reduce the heat on the grill to medium-high and grill the skewers for about 4-5 minutes (or until cooked through), with the grill lid down. Drizzle the pineapple shrimp skewers with the sauce as they cook.
Tips
- Be sure to cut the pineapple into fairly small pieces so it cooks well since these shrimp skewers are only on the barbecue for about 8 minutes.
- If you want a more seasoned shrimp, you can pre-marinate the shrimp in a bowl with lime juice and salt and leave in the refrigerator for 45 minutes.
