Ingredients
- 500 grams of dried shrimp
- 3 large limes
- 1 red onion
- 1 cup fresh lime juice
- 1 serrano chile
- 2 jalapeño peppers
- 1 garlic clove
- Cilantro leaves
- olive oil
- Black pepper to taste
- Cucumber and chopped radish to taste
Preparation
- Place the shrimp in a saucepan and squeeze lime juice over it, then add some pepper and stir until the shrimp are completely bathed in juice and set aside for 20 minutes.
- In another bowl, slice the red onion into thin slices, sprinkle with 1 pinch of salt and add a little lime juice.
- In a blender, add the chiles, lime juice, garlic and blend for 1 minute or until smooth.
- Drizzle the chili sauce over the shrimp and stir to combine, then add the red onions on top with some cucumber and radish for a different twist.
- Serve your dried shrimp in aguachile once ready, with rice, salad or some tortillas and add olive oil if desired.
Tips
- If you have frozen shrimp, remember to thaw 30 minutes before preparation and feel free to taste the shrimp. Don’t worry, they will still retain their flavor after being frozen.
- When preparing the sauce for your aguachile, scoop the mixture into a bowl and add lime juice to make it easier to remove from the blender.
