Ingredients

  • 500 grams of dried shrimp
  • 3 large limes
  • 1 red onion
  • 1 cup fresh lime juice
  • 1 serrano chile
  • 2 jalapeño peppers
  • 1 garlic clove
  • Cilantro leaves
  • olive oil
  • Black pepper to taste
  • Cucumber and chopped radish to taste

Preparation

  1. Place the shrimp in a saucepan and squeeze lime juice over it, then add some pepper and stir until the shrimp are completely bathed in juice and set aside for 20 minutes.
  2. In another bowl, slice the red onion into thin slices, sprinkle with 1 pinch of salt and add a little lime juice.
  3. In a blender, add the chiles, lime juice, garlic and blend for 1 minute or until smooth.
  4. Drizzle the chili sauce over the shrimp and stir to combine, then add the red onions on top with some cucumber and radish for a different twist.
  5. Serve your dried shrimp in aguachile once ready, with rice, salad or some tortillas and add olive oil if desired.

Tips

  • If you have frozen shrimp, remember to thaw 30 minutes before preparation and feel free to taste the shrimp. Don’t worry, they will still retain their flavor after being frozen.
  • When preparing the sauce for your aguachile, scoop the mixture into a bowl and add lime juice to make it easier to remove from the blender.
