Citrus-marinated shrimp mixed with sofrito gives fried shrimp empanadas a shiny, buttery wrapper in hot crispy dough.

These empanadas are filled with shrimp marinated in a delicious sauce made with mustard, vinegar, garlic and parsley.

Ingredients

  • 500 grams of fresh raw shrimp
  • 3 teaspoons of sherry vinegar
  • 2 tablespoons parsley for the marinade
  • 1 teaspoon Dijon mustard
  • ¼ cup extra-virgin olive oil
  • 4 cloves garlic, set aside 1 for shrimp marinade.
  • 1 shallot, finely chopped
  • 2 tablespoons chopped parsley
  • 3 tablespoons butter
  • 1 onion, chopped
  • ½ red bell pepper, chopped
  • ½ teaspoon smoked paprika
  • ¼ teaspoon salt
  • 3 tablespoons chopped fresh parsley for stuffing
  • ¼ cup fresh cheese, chopped
  • 12 6-inch empanada dough discs, thawed

Preparation

  1. For the shrimp marinade, add the sherry vinegar, mustard, olive oil, 1 minced garlic clove, parsley and chopped shallot to a medium bowl. Mix well and set aside.
  2. Wash, devein and rinse the shrimp, pat dry with a towel and then pour into a large bowl with the marinade and marinate for 30 minutes.
  3. In a skillet over medium-high heat, melt the butter, add the onion, red pepper and 3 cloves of minced garlic. Cook for 7 minutes until caramelized.
  4. Add marinated shrimp, salt and smoked paprika and cook until shrimp are pink. Remove from heat, add fresh parsley and allow mixture to cool, then add queso fresco and mix well.
  5. Brush a little beaten egg on the edge of the empanada dough, 2 tablespoons of the shrimp mixture in the middle and then fold the dough in half into a crescent shape. Roll up the edges or use a fork to seal the edges closed.
  6. In a deep skillet over medium heat with plenty of oil, fry the empanadas on each side until golden brown. Remove from heat and place on a plate with paper towels.

Tips

  • If you don’t have that much time to cook, you can buy previously peeled and deveined shrimp, making sure they are fresh. You can use medium shrimp, although for this recipe we use extra large ones.
