Today we will prepare this simple recipe to prepare homemade shrimp chipotle sauce with a touch of wine and oregano. A very practical dish ideal for sharing and surprising family and friends!


  • 500 grams of large shrimp, peeled and deveined
  • 4 chilpotle chiles in marinade
  • 2 medium roasted tomatoes
  • 1 medium white onion, thinly sliced
  • 1 clove garlic, peeled and coarsely minced
  • ¼ cup fresh lime juice
  • ¼ teaspoon oregano
  • 1/3 cup olive oil
  • 1/3 cup white wine

  1. Season the shrimp with salt, pepper and lime juice and marinate for about 30 minutes.
  2. Heat the oil in a frying pan; add the drained prawns, reserving the liquid, and the sliced onion and fry, shaking the pan and stirring the ingredients, for about 3 minutes. Remove the prawns and onion with a slotted spoon and set aside.
  3. Add the tomatoes, chipotles and their liquid, and garlic to a blender and blend to a textured sauce. Reheat the oil, add the sauce, and fry over high heat, stirring and scraping the bottom of the pan for 8 minutes to prevent sticking.
  4. Add the wine, oregano, marinade, salt to taste and cook for 1 more minute. Then add the shrimp and onion mixture and cook for about 2 minutes,
  5. Once the shrimp are just cooked through and still crispy, remove from heat and serve your homemade shrimp enchipotadas seasoned with wine and oregano, with rice and salad.


  • Avoid recipes that use canned tomatoes, as they won’t provide a roasted flavor, or those that suggest removing the seed from the chipotle to reduce the heat, use fewer chiles if you want less heat in your homemade shrimp enchipotles.
  • Be sure to thinly slice the onions if you add them to the pan at the same time as the shrimp. You can also let the onions soften in the pan before adding the shrimp.
