Shrimp in chipotle sauce with sour cream

Shrimps in chipotle sauce with sour cream are juicy and are part of the repertoire of delicious Mexican seafood recipes, absolutely practical and simple to prepare!


  • 500 grams of large shrimp
  • 3 chipotle chiles in adobo sauce
  • 1 cup milk
  • 1 cup sour cream
  • 1 tablespoon butter
  • ¼ onion, chopped
  • 2 garlic, chopped
  • Salt and black pepper to taste


  1. Devein the shrimp by making a cut in the back with a knife, rinse with plenty of water and remove excess intestines. Then set aside in a large bowl.
  2. In a blender, add the chipotle chili, milk, sour cream and salt. Blend until smooth and homogeneous.
  3. In a large skillet over medium-low heat, melt the butter, add the shrimp, salt and pepper to taste and cook, stirring occasionally, for 3-4 minutes until they turn pink.
  4. Then add the onion and garlic and cook stirring constantly for 1 minute, or until the onion is translucent.
  5. Add the chipotle cream sauce to the skillet and stir to combine, cooking for 1 minute. Then remove your sour cream enchipotle shrimp from the heat and season with salt and pepper to taste.


  • You can swap the sour cream for cream cheese for a richer, thicker consistency. However, you will have to add more milk to the mixture for it to be fully incorporated.
  • If you don’t like spicy, use just 1 chipotle chile. You’ll still get that delicious smoky chipotle flavor to your sour cream enchipotle shrimp without losing that special spicy kick.
  • To prepare this recipe, we suggest that the bigger the shrimp, the better. That’s why we use large shrimp.
