  • 500 grams of shrimp
  • 250 grams or 8 ounces of spaghetti
  • 2 tablespoons of olive oil
  • 5 crushed garlic cloves
  • 3 sun-dried tomatoes
  • 1 cup vegetable or seafood broth
  • 2 tablespoons (24 grams) sweet smoked paprika
  • 100 grams baby spinach
  • 1 cup (250 grams) grape tomatoes to taste
  • 3 guajillo chiles, finely chopped


  1. Bring water to a boil in a large pot and add 2 tablespoons salt. Add pasta and stir well. Cook until al dente according to package directions. Once done, drain with a colander and rinse well with cold water, then set aside.
  2. Heat the olive oil in a skillet over medium-high heat. Add the crushed garlic and cook, stirring constantly, until fragrant.
  3. Add sun-dried tomatoes, smoked paprika, guajillo chile, grape tomatoes and broth. Reduce heat to low and cook until tomatoes are slightly softened, about 5 minutes.
  4. Add shrimp and cook, stirring frequently for 2 minutes, then add spinach and stir constantly for 2 minutes until shrimp are cooked through.
