Chicken with prawns (Sea and Mountain)

Today we bring you a recipe to prepare a Catalan dish of chicken with prawns (Mar y Montaña) thickened with a delicious picada: a bread paste with garlic, walnuts and parsley.

Mar y Montaña is a typical Catalan dish where the flavours of the sea and the land combine to perfection. All you have to do is choose the best ingredients, and prepare a rich and thick sauce… there you have it! Don’t forget the bread!


For the picada

  • 2 tablespoons of olive oil
  • 2 cloves of garlic, skinned and sliced in half
  • 1 medium slice of rustic bread
  • 50 grams of toasted almonds
  • A large handful of parsley leaves

For the main course

  • 4 chicken thighs
  • 12 large raw prawns, heads and shells removed
  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 200 grams of chopped canned tomatoes
  • 150 millilitres of Spanish brandy
  • 300 millilitres of chicken stock
  • 1 bay leaf
  • 1 sprig of fresh thyme


  1. To prepare the picada, take a large ovenproof frying pan, earthenware dish or cast iron dish (large enough to hold all the chicken) and fry the garlic in the olive oil until golden brown and starting to smell wonderful.
  2. Set the garlic aside and fry the bread in the same oil until it is crispy and absorbs most of the oil. Then crush or mash the garlic, almonds, fried bread and parsley. Save for later.
  3. Preheat the oven to 190°C and in the same pan, season the chicken with salt and pepper and fry the chicken pieces in the oil until the skin is crispy and golden brown.
  4. Reserve the chicken and fry the prawns over a low heat in the same oil, once they are nice and pink, remove them from the pan to cool and store them in the fridge until ready to use.
  5. Add the onion to the pan and cook over a low heat until softened and beginning to brown, then add the tomatoes and simmer until the liquid has evaporated.
  6. Pour in the brandy and simmer for a couple of minutes before adding the chicken stock and herbs. Return the chicken pieces to the pan and place in the oven for about 3 minutes or until the chicken is cooked through.
  7. Add the mince and taste the sauce, season with salt, add the prawns and put back in the oven for about 5 minutes, serve with some good bread.

  • Remember that with a good mortar and pestle and a lot of effort or a quick grind in the food processor you can get a thick and slightly rough paste (chopped).
