Courgettes stuffed with prawns and mushrooms

Today we bring you some delicious courgettes stuffed with prawns and mushrooms, easy to prepare and really full of flavour thanks to the ideal combination of ingredients.

This is a light dish that can be served on its own or as a side dish to which you can also add chicken and minced meat if you wish.

Ingredients

  • 500 grams of prawns, peeled, deveined and halved
  • 8 mushrooms cut in quarters
  • 1 large zucchini or courgette
  • ¼ cup olive oil
  • 6 cloves garlic, finely chopped
  • 1 shallot, finely chopped
  • 1 large tomato, peeled, seeded, and diced
  • ¼ cup grated Parmesan cheese
  • 8 fresh basil leaves
  • Ground black pepper to taste
  • Salt to taste
  • Garlic powder to taste

Preparation

  1. Preheat to 450 degrees F (230 degrees C) and place the oven rack about 6 inches from the heat source. Grease a baking tray.
  2. Cut the zucchini in half lengthwise, scoop out the seeds and pulp, leaving a thick shell of flesh. Brush both zucchini halves with a tablespoon of olive oil and place them, cut side down, on the prepared baking sheet.
  3. Bake until the zucchini is hot and just starting to release beads of moisture, 5 to 1 minute, then remove the zucchini from the oven. Reduce oven heat to 18 degrees.
  4. Heat 2 tablespoons olive oil in a skillet over medium-low heat, and cook and stir the garlic and shallot until translucent, about 5 minutes, remove from heat and let cool.
  5. In a bowl place 1 tablespoon olive oil, diced tomato, shrimp, mushrooms, ¼ cup Parmesan cheese, garlic, basil, shallot and cooked shallot and stir to combine.
  6. Season to taste with black pepper, salt and garlic powder, spoon the mixture into the zucchini halves and sprinkle each zucchini with about 2 tablespoons of Parmesan cheese.
  7. Bake the shrimp and mushroom stuffed zucchini in the preheated oven until the cheese is golden brown and the filling is cooked through and hot, about 2 minutes.

Tips

  • You can use mint instead of basil, but either way the use of mint or basil will make these delicious zucchini stuffed with shrimp and mushrooms delight any palate.
  • If you use basil, consider adding minced meat, some walnut pieces and incorporating moarella cheese.
