Eggs stuffed with guacamole and prawns

Today we will prepare some guacamole and prawns deviled eggs, they are simple, easy to make and a great picnic meal.

There are many variations of this dish prepared with eggs, we made it with guacamole adding extra ingredients like mustard, cumin and mayonnaise.


  • 20 cooked prawns
  • 5 eggs
  • 1 avocado
  • 1 tomato
  • 1 finely chopped onion
  • 3 tablespoons mayonnaise
  • ½ teaspoon mustard
  • ½ teaspoon lime juice
  • ¼ teaspoon ground cumin
  • Salt and ground pepper
  • Paprika and coriander

  1. Put the eggs in a saucepan and fill it halfway with water over medium heat, when the water bubbles, reduce the heat to low and cook for 15 minutes.
  2. After that time, remove the eggs from the water, remove their shells, place them on a cutting board and with a sharp knife, cut each egg in half lengthwise.
  3. Remove the yolks from the eggs with a tablespoon and place them in a bowl, place the egg white halves in a serving dish and set aside.
  4. Prepare the guacamole by cutting the avocados in half and removing the flesh, add the mayonnaise, onion, tomato, cumin, lime juice, mustard to the bowl with the yolks, and spoon; mash well to a paste.
  5. Add prawns and season with salt and pepper to taste. For each deviled egg half, sprinkle with paprika and fresh coriander. Serve your delicious guacamole and prawn deviled eggs immediately!

  • The guacamole and shrimp deviled eggs are easy to prepare, but don’t forget that if you want a meal with a smooth texture, don’t overcook the shrimp.
  • To cook the shrimp, you can cook them in boiled water for 2 minutes or in a frying pan over medium high heat along with finely chopped garlic, salt and pepper to taste. The shrimp should be shelled, deveined and without heads.
  • If you prefer the original guacamole recipe just follow step 4 of the recipe and use tomato, onion, avocado and lime juice.
