Prawn Carpaccio

Today we will prepare an exquisite shrimp carpaccio very original to which we add caviar, in this dish are served very thin slices of this rich seafood marinated with different ingredients.

  • 200 grams of large red prawns
  • 15 grams of caviar
  • 2 milliliters (½ tsp) extra virgin olive oil
  • 1 gram of Alma de Caviar to taste
  • Juice and zest of 1 lemon
  • Fresh sprouts to taste


  1. Peel and devein the prawns, (remove the black string on the top); these are the intestines of the prawns or shrimps, also remove their heads.
  2. Cut the prawns in half lengthwise, place them on a piece of transparent paper and cover them with another piece of paper. Then beat the prawns gently with a mallet, stone or kitchen hammer until they are flattened according to the shape of the dish you are going to use.
  3. Remove the plastic wrap from the shrimp carpaccio and carefully place it on a plate or tray. Then carefully remove the other plastic wrap and touch up the carpaccio to give it a uniform appearance.
  4. Squeeze the lemon juice over the prawns and then add a drizzle of extra virgin olive oil. You can also add a little zest and garnish with chopped fresh chives.
  5. Put the dish in the fridge for 1 hour to allow the prawns to macerate well and reach optimum temperature.
  6. Serve the dish adding a little olive oil and the caviar on top, sprinkle with Alma de Caviar and fresh sprouts.


  • To avoid problems with anisakis parasites, freeze the fresh prawns in cling film before serving. As a general rule, the parasites disappear in about 48 hours. The prawns and king prawns are so thin that they freeze quickly, which will also make them easier to assemble. Once at room temperature, they will be in perfect condition in 5 minutes.
  • This same recipe can be used to prepare carpaccio of prawns, king prawns or langoustines, in any case it is essential that the seafood is very fresh as it is consumed raw.
