Prawn Fumet

Prepare a prawn fumet and take advantage of the flavor it can give to your dishes by extracting its marine essence with this recipe that we bring for you!


    • 500 grams of fresh prawns
    • 100 millilitres of sunflower oil
    • 2.5 litres of water
    • 2 cloves of garlic
    • 1 glass of brandy (5ml)
    • ½ glass of white wine (10ml)
    • Salt and pepper


  1. Peel the raw prawns and remove the intestines and the heads. Keep the prawns in the freezer for any other preparation.
  2. Heat the oil and the slightly crushed garlic cloves in a frying pan over medium heat, once the garlic starts to take colour, add the heads and the shrimp shells, turn up the heat and stir with a wooden spoon.
  3. Add the white wine and cognac, let them evaporate, then add salt and pepper to taste. Stir the mecla and press lightly with a spatula or wooden spoon to release the juices.
  4. Add water and cook over medium-low heat for 3 minutes in a traditional pot or 5 minutes in a pressure cooker from the time the 2 rings rise.
  5. Place the blender in the pot and puree the shrimp stock well, then pass the mixture through a fine mesh strainer and that’s it!

Preparing a fumet with the parts of the seafood that are normally discarded is not only a very good idea to take advantage of it, but it will allow us to prepare a “senyoret” rice (the one that is served with all the peeled seafood) in which the flavor of the shrimp coral is very present, which is found in its head and where much of its flavor is concentrated (we can also prepare it with prawns).

Crushing the fumet afterwards will help us to extract all its marine essence, but it also forces us to strain it well so as not to find impurities. After passing it three times through a fine-mesh metal strainer, we can use a coffee filter or repeat the process by placing a can or a clean cotton cloth in the same strainer, which will filter even the smallest pieces of the crustacean caparaon.


  • If it is too much, you can freeze it, using the plastic bags or bottles that the mineral water comes in.
  • If you don’t have a blender, you can use a blender, just let the shrimp fumet cool down a bit.
  • You can make this same recipe substituting the prawns for shrimps, in our opinion both are really delicious.
  • It is advisable to adjust the salt broth at the time when you are going to use it, this way you will better control the flavor in your meals.
