Preparing a tasty prawn and leek quiche is a simple task if you follow the steps we give you in this recipe.

This is another great dish that is really full of flavour and can be ideal for dinner or for a special occasion.


  • 30 prawns
  • 8 leeks
  • 1 white onion
  • 3 eggs
  • 250 millilitres of liquid cream
  • Water
  • olive oil
  • Salt and black pepper to taste
  • Parsley (for decoration)

For the dough

  • 250 grams all-purpose flour
  • 150 grams of butter
  • 1 egg
  • 2 tablespoons of water
  • 1 pinch of salt


  1. To make the tartlets, put the flour, 2 tablespoons of water, the butter to a creamy state, an egg and a pinch of salt in a bowl. Knead until the dough is compact and let it rest in the fridge for 1 hour.
  2. Roll out the dough with a rolling pin and roll it out into 1 round mould, lining the inside well and removing the excess. Place a handful of beans inside the tin so that it does not rise during baking and bake at 180º C for 20 minutes in a preheated oven. Set the tarts aside in the tin.
  3. Clean the leeks, chop them and cook them in a saucepan with boiling water and salt, then drain the water and set them aside.
  4. Peel, chop the onion and fry it in a frying pan over medium-high heat with a drizzle of oil and a pinch of salt. Then set aside.
  5. Prepare the cream, break the other 2 eggs into a bowl and beat, add the cream, add salt and pepper and mix well. Set the mixture aside.
  6. Distribute the onion in the cakes and spread well on the bottom, fill with the leek and sprinkle the prawns on top.
  7. Cover with the cream and bake in the oven at 200º C for 15 minutes. Remove from the mould and serve the prawn and leek quiche, adding parsley to taste.


  • The leek is a diuretic and detoxifying vegetable and is ideal together with the prawns to make delicious soups and creams for our dinners.
  • You can add Parmesan cheese on top of your shrimp and leek tart or quiche to give it a different and unique touch of flavor.
