Salmon and prawn puff pastry

  • 4 salmon fillets (200 grams)
  • 200 grams of peeled, deveined and headless prawns
  • 2 tablespoons of butter
  • 2 cloves of garlic, chopped
  • 1 shallot, chopped
  • ¼ cup white wine
  • 9 grams cream cheese
  • 150 grams fresh baby spinach
  • 2 tablespoons bread crumbs
  • ¼ cup grated parmesan cheese
  • 1 package of puff pastry (450g)
  • 1 egg for coating the puff pastry
  • Salt and pepper to taste

  1. In a frying pan, heat the butter, chopped shallots and garlic over medium heat. Sauté until the shallots become translucent.
  2. Increase the heat and add the white wine. Let the liquid cook for about 5 minutes, then add the shrimp and sauté for 2 minutes.
  3. Finally, add the cream cheese, spinach, bread crumbs and Parmesan cheese. Sauté until spinach is tender.
  4. Unfold the puff pastry on a lightly floured surface and roll out the 2 sheets, then cut them in half. This will make 4 pieas. (Each pie is 25 x 35 cm).
  5. Place each salmon fillet in the centre of each puff pastry sheet. Depending on the size of the fillet, you may need to spread the puff pastry a little more or a little less. Leave about 2 inches around the edges.
  6. Divide the spinach and prawn mixture into 4 equal parts and spread evenly over the 4 fillets. Then brush the edges of the puff pastry with the egg mixture (1 egg + 1 teaspoon of water).
  7. Fold the puff pastry starting from the longer side. When folding the short edges, brush more with the egg mixture before folding.
  8. Line a baking tray with parchment paper and place the salmon and prawn puff pastry seam side down.
  9. Make cru-shaped cuts in the top of the puff pastry with a knife, then brush with more egg wash. Bake at 200 Celsius degrees for 25-3 minutes or until the pastry is golden brown.

  • Prepare the shrimp and spinach mecla with cheese a few hours in advance.
  • Thaw and cut the puff pastry a few hours before assembly. In the meantime, store it in the fridge well wrapped in plastic wrap.
