Seafood salad

Discover how to prepare a delicious seafood salad that includes octopus, scallops, squid and shrimp. All the seafood is poached in water and vinegar obtaining a peculiar taste really exquisite!

  • 500 grams of shrimp, peeled and deveined
  • 500 grams of small scallops
  • 500 grams of squid cut into small squares
  • 500 grams of baby octopus
  • ½ cup extra virgin olive oil
  • 4 tablespoons freshly squeezed lemon juice
  • 2 cloves garlic, finely chopped
  • ½ teaspoon dried oregano
  • 1 pinch red pepper flakes
  • 8 cups white vinegar
  • 1 to 1 ½ cups celery, finely diced
  • 1 red bell pepper, diced small
  • 1 large carrot, diced small
  • ¼ cup chopped parsley
  • Salt and pepper, to taste

  1. In a small bowl, whisk together the olive oil, garlic, lemon juice, oregano, salt, pepper and red pepper flakes.
  2. In a large pot add 4 liters of water, the baby octopus and ½ cup of white vinegar. Bring to a boil, then reduce heat and simmer for about 30 minutes. When you can pierce the skin with a fork, they are ready. Remove from the pot and let cool.
  3. In a medium saucepan, bring 8 cups of white vinegar to a boil. Add the shrimp and let them simmer for 2 minutes (depending on size). Remove from the pot and set aside to cool.
  4. In the same pot, add the scallops and simmer for 1 ½ minutes. Remove and set aside to cool. Again, in the same pot, add the squid and cook over low heat for about 10 minutes until tender. Remove and set aside to cool.
  5. Chop the vegetables and parsley, then combine the seafood with the chopped vegetables, parsley and marinade and mix to combine. Refrigerate for a few hours, add chopped parsley and a drizzle of olive oil before serving.
