Shrimp Chimichangas

The dish we will cook today is one of the many foods prepared with corn tortillas in Mexico, it’s shrimp chimichangas.

Prepare these delicious shrimp seasoned with spices, chipotle chili, wrapped in corn tortillas and served with beans.


  • 500 grams of shrimp
  • 10 flour tortillas
  • 1 ½ tablespoons chipotle chili powder
  • ¼ onion, finely chopped
  • 3 cloves garlic
  • ½ cup refried beans
  • ¼ cup egg yolks
  • ½ cup shredded yellow or asadero cheese
  • 1 cup oil
  • Salt and pepper to taste


  1. Pour the olive oil into a skillet and place over medium heat. When hot, add the garlic and onion to cook.
  2. Add the chipotle and shrimp to the same skillet, reduce heat to medium-low and cook for 4 more minutes, stirring occasionally until shrimp are golden brown.
  3. Remove from heat and season with pepper and salt to taste, set aside and add a little lemon juice if desired.
  4. Place a spoonful of refried beans on each corn tortilla, spread the beans and add the shrimp on top along with the cheese.
  5. To shape the chimichanga, fold the tortilla and spread some egg yolk on the inside edge of one side of the tortilla so it sticks together as you continue to fold it.
  6. In a frying pan with hot oil fry the chimichangas over medium heat until they are completely golden brown, you will achieve this in about 3 minutes.
  7. Remove the shrimp chimichangas from the oil and place them on a plate with paper towels to remove excess oil.

  • To prepare these delicious and crunchy shrimp chimichangas you can use medium shrimp. Remember to clean and devein them.
  • Do not use the shrimp shells in this type of dish, they are generally used to prepare broths and flavor soups.
