Shrimp au gratin

Today we will be preparing some super delicious and potent shrimp au gratin as this dish is loaded with delicious cheeses and has a spectacular combination of ingredients.

Join us to make these melted cheese shrimp with onion, garlic, celery, seasoned with pepper and a touch of hot sauce.


  • 500 grams of cooked shrimp
  • 2 large egg yolks, lightly beaten
  • 1 stick unsalted butter
  • 2 cloves garlic, minced
  • 1 medium white onion, finely chopped
  • 1 stalk of celery, finely chopped
  • 2 tablespoons sliced green onions
  • 1 12-ounce can evaporated milk
  • 2 tablespoons all-purpose flour
  • Juice of one lemon
  • ½ cup grated Gruyere cheese
  • ½ cup shredded Fontina cheese
  • 2 teaspoons hot sauce
  • ½ teaspoon cayenne pepper
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon kosher salt to taste


  1. Melt butter in a large skillet over medium-high heat. Add onion, garlic, celery, green onions and cook, stirring until vegetables are softened, about 5 minutes.
  2. While vegetables are cooking, whisk egg yolks and evaporated milk in a bowl until well blended, then set aside.
  3. Add the flour to the skillet and mix well with the vegetables to create a white roux (Mecla of flour and fat); be sure not to let the flour brown. About 2 minutes.
  4. With a whisk, add the milk mecla, stirring constantly so that it integrates into the roux mecla. Preheat oven to 20Celsius (350°F).
  5. Stir in the lemon juice, salt, hot sauce, black pepper and cayenne. Continue stirring for another 5 minutes (if the sauce is too thick, add a little water or milk to thin it out – it should have the consistency of heavy cream).
  6. Remove from the heat and fold the cheese in half; stir until it is completely melted and fully incorporated.
  7. Divide shrimp among 4 ovenproof mini casseroles or iron serving dishes. Or pour melted mixture into a deep skillet or large baking dish.
  8. Pour the cheese sauce over the shrimp, then sprinkle with the remaining shredded cheese on top (you can also top with a few cooked whole shrimp).
  9. Bake until bubbling, about 15 minutes. Return to oven and broil until cheese begins to brown. About 5 minutes.
  10. Remove your shrimp au gratin from the oven, serve immediately and serve with rice and salads.

  • To prepare these shrimp with melted cheese you must take into account the oven temperature, preheat to 20Celsius (350°F) and try to keep the temperature constant.
