Shrimp mofongo is a delicious dish that has been around for many years, it is a variation of the traditional mofongo, only this one, as good seafood lovers that we are, we prepare it with shrimp.

  • 500 grams of jumbo shrimp
  • 1 bag of pork rind (230 grams)
  • 4 green plantains (macho)
  • 3 green peppers
  • 3 white onions, chopped
  • 2 tablespoons of butter
  • Ground garlic
  • 1 sprig of fresh parsley
  • 1 sprig fresh cilantro
  • 1 can of bell pepper
  • Chicken broth
  • White wine
  • Olive oil
  • Adobo
  • 6 olives
  • Salt and pepper to taste


  1. Cut plantains into small pieces and fry in oil over medium-high heat for 8 minutes, remove and set aside on a plate.
  2. In a mortar or pestle, mix the garlic, pork rind, adobo, oil to taste and plantains. Mash the mixture well.
  3. In a skillet over medium heat, add a tablespoon of oil, shrimp, garlic, a pinch of pepper, a pinch of salt, seasoning (to taste), chopped parsley and cilantro.
  4. After 2 minutes add the same amount of onion and green pepper, white wine, 2 tablespoons of chicken broth, butter and olives.
  5. Cook this mixture for 10 minutes and add white wine to taste, add the bell pepper strips and cook for 5 more minutes.
  6. In a deep bowl (size to taste), pour the plantain already processed in step 2, form a base and turn it over on a plate.
  7. Finally add the shrimp along with the garlic broth prepared earlier and that’s it, you have a delicious mofongo with shrimp.
