Today we will prepare a delicious prawn stuffed sole with lean crab meat accompanied by cream cheese, wine and spices.

It’s an absolutely delicious dish that will get rave reviews from your guests. This is a meal that can be prepared in advance and is easy to make.


  • 8 cooked prawns, peeled and chopped
  • 4 sole fillets (6 ounces each)
  • 1 can (6 ounces or 180 grams) crab meat, drained, shredded, and shredded, with cartilage removed
  • ¼ cup bread crumbs
  • ¼ cup melted butter, divided
  • 2 tablespoons cream cheese, whipped
  • 2 teaspoons chopped chives
  • 1 clove garlic, minced
  • 1 teaspoon lemon zest
  • 1 teaspoon chopped fresh parsley
  • 1 ½ cups cherry tomatoes
  • 2 tablespoons dry white wine or chicken broth
  • 2 tablespoons lemon juice
  • ½ teaspoon salt
  • ½ teaspoon pepper


  1. In a small bowl, combine prawn, crab, bread crumbs, 2 tablespoons butter, cream cheese, chives, garlic, lemon zest and parsley.
  2. Place about ¼ cup of filling on each fillet, roll up and secure with toothpicks.
  3. Place each fillet on a double thickness of aluminum foil (about 18×12 inches), mix wine, tomatoes, lemon juice, pepper, salt, remaining butter and place on top of fillets. Fold the foil around the fish and seal tightly.
  4. Grill the shrimp and crab stuffed sole, covered, over medium heat for about 12 to 15 minutes or until the fish flakes easily with a fork.
  5. Carefully open the foil to allow steam to escape and serve this delicious dish with rice or salad.


  • You can prepare this delicious sole stuffed with shrimp, crab and spices in the oven by lining a baking pan with foil and leaving uncovered for about 25 minutes.
  • Add a double helping of cream cheese and omit the butter if desired, substituting more freshly squeezed lemon juice for the lemon zest.
  • Also serve this dish with a homemade creamy garlic spice sauce.
