Som Tam: Thai salad

  • 2 tablespoons palm sugar or to taste
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon tamarind water
  • 3 cloves garlic
  • ½ teaspoon salt
  • 2 tablespoons crushed roasted peanuts
  • 2 tablespoons dried shrimp, soaked, rinsed and drained
  • 1 lime, quartered
  • 2 long beans, cut into 1-inch pieces
  • 6 bird’s eye chilies or to taste
  • 4 cups shredded green papaya


  • 2 cups steamed rice
  • 2 cups raw vegetables such as green beans and collard greens

  1. In a small bowl, mix together the palm sugar, fish sauce, lime juice, and tamarind water to create a dressing for the Som Tam salad. Taste it-it should taste sweet, salty, and sour all at once-and then adjust any of the ingredients to your liking, and set aside.
  2. In a large wooden mortar, pound the garlic with the salt, then add and pound the peanuts and dried prawns to a coarse paste.
  3. Add the lime quarters to the mortar and pestle, then add the beans, mash lightly and set aside.
  4. Stir in the bird’s eye chillies and lightly crush, remove the first batch of crushed ingredients and place in a bowl.
  5. Add the green papaya to the mortar and pestle and pestle, then add the dressing prepared earlier and combine well. It should taste sweet, sour, salty and spicy.
  6. Transfer the papaya mixture to a salad bowl and mix well with the previous preparations.
  7. Serve your Som Tam with steamed rice, raw vegetables like green beans and cabbage leaves and add more crushed peanuts on top of the salad.

  • The more you pound the chilies, the hotter the dish gets, so keep pounding until you can handle the heat on your palate!
  • If your pestle and mortar is big enough, mash the papaya while using the other hand and a large spoon to mix it into the salad.
