Today’s dish has an exquisite combination of flavors, on the one hand we have a tamarind sauce for shrimp with a unique flavor mixed with pepper, chili and onion to intensify the flavor of some tender shrimp.

  • 500 grams of shrimp, peeled and deveined
  • 2 cloves of garlic
  • ½ cup of white wine
  • 3 chipotle peppers
  • 1 tablespoon olive oil
  • ¼ red onion
  • 3 tablespoons sugar
  • 1 cup water
  • 8 tamarind pods
  • Salt and pepper to taste


  1. Remove the peel and seeds from the tamarind pods, boil them in a saucepan with 1 cup of water and the sugar until soft. Let cool and set aside.
  2. Combine the tamarind and chipotle chiles in a blender until you have a smooth paste, then mix in a bowl the tamarind pulp, white wine, stir well with the help of a whisk and set aside.
  3. Sauté the garlic and chopped onion with the tablespoon of olive oil for a few minutes, add the tamarind mixture and continue cooking for 4 minutes, season with salt and pepper, then set aside.
  4. Add salt and pepper to the shrimp on both sides, pour 1 tablespoon of olive oil in a frying pan and when hot, fry the shrimp for 3 minutes on each side.
  5. Serve the shrimp on a plate and dip them in the tamarind sauce accompanied with salad, chopped cilantro and steamed rice.
