Tasting a delicious Asian meal is essential for those palates that love exotic dishes. The pleasure of eating led us to try many dishes of this gastronomy for its varied and unique blend of flavors and texture.

One of the dishes we loved and want to share with you is the Thai shrimp with coconut milk, prepared with that rich oriental blasmati rice, tender shrimp, spices and a touch of lemon at the end, it creates a flavor party on the palate!

Ingredients

  • 350 grams of large shrimps, peeled and deveined
  • 500 milliliters of chicken broth
  • 1 400-milliliter can of coconut milk
  • ½ cup basmati rice
  • 1 ½ tablespoons butter
  • 1 medium onion, diced
  • 2 cloves garlic, finely chopped
  • 1 red bell pepper, diced
  • 1 tablespoon yellow or red curry
  • 1 tablespoon fresh ginger, grated
  • 1 handful coriander, finely chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Preparation

  1. Soak rice in cold water for 45 minutes, drain, cook in a small pot with 1 cup boiling water for 10 minutes. Then set aside.
  2. In a medium saucepan, melt butter, add shrimp, add salt and pepper to taste and cook for about 4 minutes until pink.
  3. Remove the shrimp from the pan and set aside in a bowl. In the same pan, add the garlic, onion and paprika. Cook for about 3 minutes over medium heat then add ginger and mix.
  4. Add the tablespoon of curry to the mixture and stir well until everything is integrated. Add the broth and then stir in the coconut milk.
  5. Bring the mixture to a boil over medium heat, reduce heat to medium-low and cook for 10 minutes uncovered.
  6. After that time add the rice, shrimp, cilantro, lime juice and mix well.
  7. Serve your thai shrimp in bowls, garnish with chives, add lime juice, season to taste and enjoy!

Tips

  • If your budget allows it, you can accompany these delicious Thai shrimp with satay sauce, one of the typical condiments of Asian food.
  • You can substitute bastami rice for brown rice or arborio rice, both are rich in fiber and combine very well to prepare this dish.
